recipe 161 氣鍋蒸蛋

 a small lump of ground pork

beat in 3 jumbo eggs

pour into 4 custard bowls
up to 1/2~ 2/3 of the bowl
use a screen sift to remove the bubbles
add a dash of soy sauce

add hot water to below the brim
stir


place in preheated  pan with water to half the height of the bowl
cover with lid slightly ajar to let go of the steam
this creates a perfect smooth surface
 cook at medium heat for 6 minutes

perfect dish for children
